This farm is different from other farming estates in that besides producing Chianti Classico wines and Extra Virgin olive oil, they also breed a rare species of pigs called Cinta Senese. From these animals, which are protected by the EU and certified as DOP (Protected Denomination of Origin), they offer guests a varied tasting of pork products and cold cuts that include salami, sausages, prosciutto and whatever else is available and cured to perfection at any given time. The farm has vineyards and olive groves and woodlands (covering over 85 Hectares) are all fenced in where Cinta Senese pigs roam freely. They have their small butchery on the farm and curing rooms with products in them.
The tour of the farm, before lunch, includes an introduction to the wines, how their Extravirgin Olive Oil is made, a description of the Cinta Senese breed of pigs that risked extinction in the mid 1990, culminating with a visit to the laboratory so that guests can see the various stages of maturation of the pork products being cured and have an explanation of the particular properties and origins of this rare breed.
After a welcome aperitif of rosè made by an organic estate nearby, guests sit down to a variety of appetizers made with products from the gardens, and a tasting of Extra Virgin Olive oil. After this series of "bruschette" - as we call them - they serve a plate of pasta made with either ragù meat sauce based on Cinta Senese, or on the organic garden vegetables. This is followed by platters of Cinta Senese cold cuts, salad, and a tasting of Balsamic Vinegar and of their Truffle oil. The Truffle oil is served with a fresh white wine, again produced organically by other friends who also make the rosè tasted earlier. A dessert completes the lunch. They do cater to vegetarians and celiacs as long as we are given prior notice.
Throughout the lunch the owner who is your host during the visit and tour, explains each wine and its particular properties and best accompaniment to the various dishes. With lunch they serve Chianti Classico wine, Chianti Classico Riserva and Elogio Super Tuscan. Once the lunch is completed, guests are welcome to go into their shop and either purchase a bottle of wine, extravirgin olive oil or any of a variety of other products to take with them, or have them shipped directly home and avoid the bother of having to carry them for the rest of their holiday.
The cost for the visit, tour and lunch is € 43,00 per person
Bookings for small parties need to be made a day or two in advance. Larger groups need to book at least a month prior to desired arrival date. They are closed on Sundays.
